Sollissandre Noirs’ many tiny bubbles form a pretty string of ever bubbly pearls along the rim of the glass. Indeed, this champagne does have a slightly deeper glow than its white pal/partner. It could hardly be different when the grape is 100% Pinot Meunier. Before, this black grape was usually casted as the one in the middle who brings the rest of the team together with its charming, fruity character. Well, this time is a solo performance. Sollissandre Noirs is almost too easy to appreciate with its fruity sweetness. We have provided a helping hand and edge from old oak casks without spoiling the light elegance of Pinot Meunier grapes from our land in Loisy-en-Brie. This glass holds as many tannins as needed to add a bit of bite to the glass and provide it both integrity and poise.

Initially, the wine is fermented in steel vats. Then part of the wine was aged half a year in oak casks. Eventually, we have blended the two wines in the proportion that appealed to us the most. This blend was bottled and then transferred to the caves to age for several years. Meanwhile, time unites the different elements within the bottle. Time makes the champagne.

Now, the first batch has resurfaced after four years of aging. You can expect a champagne that happily settles on your palate alongside a bit of food. Unless you prefer to hang out with it on its very own.

We disgorge Sollissandre Noirs in small batches. This way we can choose a dosage that perfectly matches the current development of the champagne.
