Solliphere is made with 100% Chardonnay grapes from one specific plot of Chardonnays in Loisy-en-Brie. It represents the natural transformation of grapes from one single vineyard made into wine and then champagne.
Solliphere 2014 has a natural balance between sweetness and moderate acidity that mirrors the year with its warm as well as early and fast start of growth followed by a very cold summer.
The possibilities to enjoy this champagne are many whether on its own or with food based on fish, sea food or anything that will combine in a balanced way.
You may discover Solliphere in different versions as we disgorge small lots from the total number of 3.500 bottles to make the dosage fit the development of the champagne very accurately. Please find further information on the back label or in the fact sheet.
Solliphere is a pleaser now, but we expect it to develop in the years to come as well.
